Easy Leftover Chicken Oats Healthy Breakfast


We all are aware of the benefits of oats as a healthy meal option especially for breakfast and I'm always on the look out for savory options we can have for breakfast.  Also hate to see any food going to waste and leftover chicken (especially from a curry) is usually the easiest to re-use since it's already got some flavorful taste from the curry.

Ingredients:

  • 1 cup Shredded Leftover chicken 
  • 1 diced medium sized onion
  • 2 chopped cloves of garlic 
  • Olive Oil (or any other oil)
  • salt to taste 
  • 1/2 cup instant oats
  • 1 cup water 
Serves: 2

Instructions:

  • Heat oil in a wok, add the onions and garlic and toss around till it starts to brown but still crisp
  • Add the shredded chicken and stir for few minutes 
  • In a seperate pan add the oats and salt to the hot water and cook for a couple of minutes.  
  • Once the oats are cooked add the chicken mixture to the oats and eat hot

Tangy Oats Dosa


To make: 3 Medium Size Dosas

Ingredients:

  • 1 cup coarsely ground Oats
  • ½ Cup Water
  • 1 finely chopped small sized Onion
  • ½ finely chopped Tomato
  • 1 Tbsp Schezwan Sauce (Or any spicy sauce)
  • 1 Tbsp Sweet Bell Pepper sauce (or any sweet sauce)
  • 2 tsp Oil


Procedure:
  1. 1    Sauté the chopped onions in ½ tsp oil and keep aside.
  2. Sauté the chopped tomatoes in ½ tsp oil and keep aside
  3. Add the sauted onions, tomatoes,  sauces to the powdered oats  and mix. Add water enough to make it a batter and mix till of thick consistency.
  4. Heat ½ tsp oil in a flat pan and pour half a cup of batter onto the surface and spread into a circle.
  5. Turn over once browned and remove from pan once cooked.
  6. Serve Hot

Salaami & Eggs with Toast



Ingredients:

2 Tsp Olive Oil
½ cup chopped onions
½ cup of chopped salami/sausages
3 Tsp Ketchup
1 Tsp Chilli sauce
2 Eggs
2 slices Toasted Bread

Procedure:

·        Heat oil in a pan
·        Add onions and fry till golden.
·        Add salami/sausages to the pan and fry until slight brown
·        Add the ketchup and chilli sauce to the pan and mix and cook for two minutes. 
·        Break the eggs in a bowl and beat and add the beaten egg mixture to the pan. Stir until cooked. 
·        Sprinkle herbs for a final touch.

Note : This mixture can be used as a Pizza Topping as well

Baked Garlic potatoes with olives




We do love our French fries when we go out to eat but they are so rich in calories that we feel real guilty on consumption. So I thought why not bake the potatoes and see if it stops my cravings for fries. And voila !! It did…..the baked recipe below is as yumm as the fried option. Do try them.

Ingredients:

2 medium sized Potatoes
2 medium sized onion
½ cup green olives
2 Tbsp oil
1 tsp Garlic paste
1 tsp mixed herbs

Instructions:
  1. Preheat the oven to 150 deg C.
  2. Chop the potato into fine slices. Chop the onions to fairly large pieces. Mix in a mixing bowl the potatoes, onions and olives. Add the oil and herbs and garlic paste and mix well until the potatoes are coated well.
  3. Grease a large flat pan with little oil and spread the mixture into it and place it in the oven for ten minutes.
  4. Remove and turn the potatoes upside down on the pan and put again for another  10 mins and serve hot.
